Oh man...I love Boxty. I think I need to go to Ireland to get some! It has never been quite as good in restaurants as what my mom and aunt used to make. It was in the Friday night rotation, you know, no meat. We had boxty with eggs. My mom was always a bit irked when I'd ask for a third pancake but hadn't touched my eggs. My non-Irish Catholic friends always used to ask if we were poor...don't hink we were rich but we would've eaten that regardless. Maybe it my Irish but I just love potatoes all ways except potato salad!
